This Chia & Sour Plum Nectar is inspired by the traditional Persian Sharbat. Not only is this drink the perfect balance of tang, sweetness, and fun textures, but it's full of antioxidants and fiber, making it a great choice for a healthy afternoon treat.

Ingredients
3 tbsp. sour plum paste (Try ours if you can't find any near you!)
1 tbsp lemon or lime juice
3 tbsp soaked chia seeds
Tajin seasoning
How to Make Chia & Sour Plum Nectar:
Step 1: Soak the Chia SeedsStart by soaking the chia seeds. Use a 1:10 ratio of chia seeds to water, and let them sit for at least half an hour. This process will hydrate the seeds and create the gel-like texture that is characteristic of chia seed drinks. I usually make a big batch of chia seeds at a time so I have it ready in my fridge.
Step 2: Dissolve the Sour Plum Paste
Our sour plum paste is the star of this show. To prepare, dissolve the paste in 4 ounces of boiling water (pour it from your kettle right into your glass). The hot water will help break down the paste and release its vibrant, tangy flavor.
Step 3: Rim Your Glass
This step is where the magic happens! Rim your glass with the plum paste, giving it a colorful border and a sour punch with every sip. Then, sprinkle Tajin seasoning powder onto it. This adds an extra tangy twist and a bit of heat that complements the sour plum paste beautifully.
Step 4: Assemble Your Drink
Combine the dissolved plum paste, chia seeds, and lime juice in your glass. This creates a delightful mix of tangy, sweet, and sour flavors that make this drink truly unique. Top this mixture with 8-12 ounces of water, depending on how strong you like your drink. Stir well to ensure all the flavors meld together.
And there you have it - a Chia & Sour Plum Nectar, ready to refresh and rejuvenate! This drink is more than just a thirst quencher; it's a vibrant, healthy concoction that brings together the old and new, tradition and innovation. It's a little sip of history, a piece of culture, and a burst of flavor, all in one glass. Enjoy it on a hot summer day, serve it at your next party, or make it your go-to drink whenever you want a burst of refreshing flavor. Happy sipping!
